Protein Pancakes (Grain-free)

  • 4 eggs only use 2 yolks. Use flax eggs if there is an egg allergy.
  • 2 bananas ripe
  • 1 cup almond meal/flour
  • 1/4 cup coconut flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • coconut oil for pan
  • pink salt small pinch


  1. Combine all ingredients in a medium mixing bowl. Use a mixer to blend until smooth. The batter should be pourable but thick. Allow to sit.
  2. Pre-heat pan over medium heat and add 2 Tb. of coconut oil.
  3. Use a ladle to scoop approx 1/4 cup of batter and pour into pan. Cook until golden brown on both sides and edges are firm.
  4. Repeat until batter is finished.
  5. Garnish with berries, jam or maple syrup.
