Basic Buddha Bowl
Ingredients
- 2 cups brown rice, millet or quinoa cooked
- 1 cups lentils cooked
- 1/2 head broccoli
- 1/2 med red onion diced
- 1 med carrot grated
- 1/2 small daikon radish grated
- 1/2 cup microgreens
- 1 cup mixed greens
- 1/4 cup hemp seeds
- 1/4 cup sesame oil
- 2 Tb umeboshi vinegar
- 1 clove garlic minced
- 1 in ginger minced
- 2 limes, juice
- 1 avocado sliced
Instructions

Mix sesame oil, vinegar, garlic, ginger and lime in a bowl and set aside.

Place 1/2 c. of rice in bowls to serve.

Top with all other ingredients arranged separately.

Spoon 1 Tb. of dressing mixture on each bowl.
