Pumpkin Brownie Bites


  • 2 cans pumpkin puree
  • 1 c. unsweetened almond butter
  • c. raw cacao powder
  • ½ tsp. Himalayan salt
  • 1 tsp. stevia or monk fruit powder
  • Coconut oil for pan


  1. Preheat the oven to 350 degrees F.

  2. Generously oil a mini muffin pan or use muffin cups.

  3. Beat together all ingredients with an electric mixer.

  4. Pour batter into muffin pan or cups and smooth.

  5. Bake for 40-45 minutes, until a wooden skewer inserted comes out clean.

  6. Cool completely on cooling rack or put in the fridge to speed cooling.
