Mashed Rosemary Cauliflower
- 1 head cauliflower, chopped or broken into florets
- ½ tsp. macadamia nut butter
- 2 Tb. minced garlic
- 2 tsp. olive oil
- 1 tsp. fresh rosemary, minced
- ½ tsp. sea salt
- 4 sprigs rosemary for garnish
- Salt and pepper to taste
Lightly steam cauliflower, or blanch in hot water for 3-5 minutes
Drain & place in processor fitted w/ S blade. Process the cauliflower until it is grainy or reaches the texture of rice.
Add macadamia butter, olive oil, herbs & spices and process until light & fluffy, scraping sides frequently. This could take several minutes.
Place in serving bowl & enjoy.
