Chicken Soup
Ingredients
- 3 qt. bone broth
- 1 large minced onion
- 4 cloves garlic, minced
- 3 large carrots
- 2 green onions, chopped (for garnish)
- 3 large stalks celery
- 2 bay leaves
- 1 in. fresh ginger
- 4 cloves garlic
- ½ c. fresh parsley
- ½ c. fresh cilantro
- 1 Tb. coconut oil
- 1 tsp. sea salt
- 1 strip kombu seaweed
- 8 shitake mushrooms, minced
- 3 lbs. pastured chicken thigh meat, ground
Instructions

• Heat the coconut oil in a stock pot. Add the onions, carrots, celery and garlic. Saute on medium heat until onions are transluscent.
• Add remaining ingredients and bring to a boil. Reduce heat and simmer on low heat for 40 minutes.
• Serve and garnish with chopped green onions.
