Black Bean Brownies

Black Bean Brownies
Ingredients
- 1 15 oz. can black beans
- 6 large eggs
- 1 Tb. vanilla extract
- ½ tsp. sea salt
- 6 Tb. unsalted organic butter
- 1 ½ c. + 2 Tb. raw honey or grade B maple syrup
- 6 Tb. unsweetened cocoa powder
- 2 tsp. baking powder
Instructions
- 
										Preheat oven to 350 & grease 16 cupcake pan. 
- 
										Dust cocoa powder lightly on inside of pan. 
- 
										Strain and rinse beans 
- 
										Place beans, 3 eggs, vanilla & salt into blender & blend on high until liquefied 
- 
										Whisk together cocoa powder & baking powder 
- 
										In a bowl, use mixer to cream butter & honey. 
- 
										Mix in 2 remaining eggs, beating for a minute after each addition 
- 
										Beat the bean mixture into the rest of the batter 
- 
										Stir in cocoa powder & beat on high for 1 minute 
- 
										Scrape batter into pan & smooth the tops 
- 
										Bake for 35 minutes 
- 
										Cool on rack until room temperature
