Pre-heat a medium skillet.
Combine the millet, oat and buckwheat flours in a large mixing bowl. Add in all spices.
Add the cabbage and avocado. Begin to hand knead to form the dough. Slowly add water as you knead for approximately 5 minutes.
Divide the dough into 10 portions. Roll each portion into a ball and then flatten between your hands.
Place on a marble or glass cutting board or rolling cloth. Roll gently to 51/2 in. diameter.
Use a spatula to lift the paratha o t skillet. Cook on medium eat approximately 30-60 seconds and flip. Continue to flip until golden brown on both sides.
