Vegetable Parathas

Ingredients

  • 1 c. millet flour
  • ¼ c. oat flour
  • ½ c. buckwheat flour
  • 1 Tb. avocado oil
  • 1 avocado, ripe
  • ½ c. savoy cabbage (finely shredded)
  • 2 tsp. sesame seeds
  • ½ tsp. cumin powder
  • ½ tsp. coriander powder
  • 1 Tb. ginger, finely grated
  • 1 tsp. Himalayan pink salt
  • 1 tsp. turmeric powder
  • c. water

Instructions

  1. Pre-heat a medium skillet.

  2. Combine the millet, oat and buckwheat flours in a large mixing bowl. Add in all spices.

  3. Add the cabbage and avocado. Begin to hand knead to form the dough. Slowly add water as you knead for approximately 5 minutes.

  4. Divide the dough into 10 portions. Roll each portion into a ball and then flatten between your hands.

  5. Place on a marble or glass cutting board or rolling cloth. Roll gently to 51/2 in. diameter.

  6. Use a spatula to lift the paratha o t skillet. Cook on medium eat approximately 30-60 seconds and flip. Continue to flip until golden brown on both sides.

  7. Serve warm
