Prunes – Prunes contain potassium, magnesium, calcium, fiber and iron. They are also excellent sources of boron which is a trace mineral necessary for bone metabolism.
Dates– Dates are rich in beta-glucans, which is a type of soluble fiber known to lower the body’s absorption of cholesterol. They are also high in copper, manganese, magnesium, iron and phosphorus.
Cashews – These beloved nuts are an excellent source of protein and also contain biotin, iron, zinc and magnesium. They are also a monounsaturated fat source which has benefits in cancer and heart disease prevention.
Run all ingredients except water in food processor until mostly smooth.
Add water slowly as needed for consistency.
Press onto cookie sheet lined with wax or parchment paper.
Cool in fridge for at least an hour.
Cut into 2 in x 1 in pieces and store in fridge.
