Chicken Soup

Ingredients

  • 3 qt. bone broth
  • 1 large minced onion
  • 4 cloves garlic, minced
  • 3 large carrots
  • 2 green onions, chopped (for garnish)
  • 3 large stalks celery
  • 2 bay leaves
  • 1 in. fresh ginger
  • 4 cloves garlic
  • ½ c. fresh parsley
  • ½ c. fresh cilantro
  • 1 Tb. coconut oil
  • 1 tsp. sea salt
  • 1 strip kombu seaweed
  • 8 shitake mushrooms, minced
  • 3 lbs. pastured chicken thigh meat, ground

Instructions

  1. • Heat the coconut oil in a stock pot. Add the onions, carrots, celery and garlic. Saute on medium heat until onions are transluscent.

    • Add remaining ingredients and bring to a boil. Reduce heat and simmer on low heat for 40 minutes.

    • Serve and garnish with chopped green onions.
