Black Bean Brownies

Ingredients

  • 1 15 oz. can black beans
  • 6 large eggs
  • 1 Tb. vanilla extract
  • ½ tsp. sea salt
  • 6 Tb. unsalted organic butter
  • 1 ½ c. + 2 Tb. raw honey or grade B maple syrup
  • 6 Tb. unsweetened cocoa powder
  • 2 tsp. baking powder

Instructions

  1. Preheat oven to 350 & grease 16 cupcake pan.

  2. Dust cocoa powder lightly on inside of pan.

  3. Strain and rinse beans

  4. Place beans, 3 eggs, vanilla & salt into blender & blend on high until liquefied

  5. Whisk together cocoa powder & baking powder

  6. In a bowl, use mixer to cream butter & honey.

  7. Mix in 2 remaining eggs, beating for a minute after each addition

  8. Beat the bean mixture into the rest of the batter

  9. Stir in cocoa powder & beat on high for 1 minute

  10. Scrape batter into pan & smooth the tops

  11. Bake for 35 minutes

  12. Cool on rack until room temperature
