Asparagus Soup

Asparagus – Asparagus is a fairly high protein vegetable. Almost half of it’s calories come from protein. It is also an excellent source of vitamin K, folic acid, riboflavin and vitamin B6. Asparagus is a known diuretic and some of its phytochemicals have been shown to be helpful in rheumatic complaints.

Onion –Onions are high in organic sulfur compounds, as well as a wide range of flavonoids. They have been used in asthma, blood sugar instability, hypertension and in assisting to lower blood lipid levels.

Ginger – Ginger is powerful in its ability to help with both gastrointestinal complaints and inflammation affected concerns. There are numerous studies demonstrating its success in aiding motion and morning sickness. Also, many people with arthritis and autoimmune conditions express relief.

Ingredients

  • 1 lb. asparagus
  • 1 large onion, chopped finely
  • 2 tsp. minced garlic
  • 1 tsp. fresh minced ginger
  • 1 Tb. coconut oil
  • 3 c. bone broth
  • 1 ½ c. unsweetened coconut milk
  • ¼ tsp. dried rosemary
  • Salt & pepper to taste

Instructions

  1. In a large pot, saute onions, garlic, and ginger until onions are translucent. Add broth and bring to a boil.

    Trim tough ends from asparagus and discard. Cut remaining asparagus into half inch pieces.

    Add asparagus and rosemary to broth. Reduce heat and simmer for 30 minutes.

    Stir in coconut milk, salt and pepper. Cook another 1-2 minutes.

    Put all ingredients in high speed blender and puree until smooth.
