Basic Buddha Bowl

Ingredients

  • 2 cups brown rice, millet or quinoa cooked
  • 1 cups lentils cooked
  • 1/2 head broccoli
  • 1/2 med red onion diced
  • 1 med carrot grated
  • 1/2 small daikon radish grated
  • 1/2 cup microgreens
  • 1 cup mixed greens
  • 1/4 cup hemp seeds
  • 1/4 cup sesame oil
  • 2 Tb umeboshi vinegar
  • 1 clove garlic minced
  • 1 in ginger minced
  • 2 limes, juice
  • 1 avocado sliced

Instructions

  1. Mix sesame oil, vinegar, garlic, ginger and lime in a bowl and set aside.

  2. Place 1/2 c. of rice in bowls to serve.

  3. Top with all other ingredients arranged separately.

  4. Spoon 1 Tb. of dressing mixture on each bowl.
